Freezer Sandwiches - Who Knew?

I have been on a journey over the last couple months to stick to a budget. Ultimately, I want to be a homeowner. So.. budgeting is helping me with savings.  I have scoured endless websites, YouTube videos and blogs looking at various ideas to help me in my endeavor.

One thing I have ran across, on more than one occasion, is "freezer sandwiches".  I know what you are thinking, I thought the same thing, SOGGY! That was until I tried it.

I was watching Jamerrill over at Large Family Table on Youtube. She makes freezer meals for her large family. One of the things she makes and often instills the help of her children with are freezer sandwiches. Some are lunch meat and cheese (condiments omitted) and some are Peanut Butter and Jelly.

She has mentioned in her video that someone had asked her if ever she had a problem with soggy bread and she said no. She also mentioned that she uses wheat bread.  Well, I thought I would give it a try.

Its just me and my two children so I didn't need to make too many, but I started with 24. I made half ham and cheese and the other half PB&J. We would take them out the night before school/work and put them in the fridge, then in the morning we could just grab and go.  We did not use wheat bread and guess what? NO SOGGY BREAD!  I could not believe it! And, it was great! Not hard or stale, it was actually rather fresh. And there have been days when I forgot to take one out of the freezer and grabbed straight from the freezer in the morning and it was good to go at lunch time.

Freezer sandwiches save me money from buying quick foods when I am in a hurry as well as time in the morning. Currently I am making them 3 weeks at a time.

What's Up With All The Postcards? Who and What is Postcrossing?

There are lots of things in life that I take pleasure in. I love researching my family history, watching & reading paranormal documentaries, shopping at thrift/bargain stores, taking road trips with my children and traveling. Traveling is something I have always wanted to do and have been many places. However, one day I want to be able to travel to various countries. As a single mom on a tight budget, traveling abroad is not really an option right now.

So what is a single mom to do with a passion for travel but lack of funds? POSTCROSSING! What is postcrossing you might ask? It is a website dedicated to sending and receiving postcards from and to all over the world. For as little as a postcard & stamp you can enjoy imagery, historical monuments, scenery and so much more from places of interest both domestic and internationally. Postcrossing.com allows you to “travel” without ever leaving your home. It allows you to correspond with people from different countries. Postcrossing.com has been making my mailbox happy for over a year now.

How do you get started? Visit and sign up (free of course) at www.postcrossing.com. Then choose to “Send a Postcard.” At first you can request up to 5 addresses. Postcrossing.com will give you a random address. This address may be here in the USA or somewhere abroad. You are also given a number to put on the postcard. Once the postcard arrives at its destination, the receiver will log into postcrossing and “register” your postcard. At this time, postcrossing sends you an email informing you that your postcard has arrived at its destination. Now, you are able to go request another address. Simultaneously, once your card has been registered, your name “goes in the hat” so to speak. Your name is given to another user and you will be receiving a random postcard from somewhere in the world.

I have been extremely happy with postcrossing.com. I have sent nearly 200 postcards in the last 481 days and received 183. (I have several traveling at the moment that is why there is a difference in numbers). I keep my postcards in an album so that I can look at them from time to time. I now have gained two pen pals via postcrossing, one in Belgium and one in London. My kids have both caught on to this postcard craze and now they too are members. What a wonderful way to teach your children about geography!  So if you are limited in finances or the availability to travel and looking for a way to get a glimpse into the world, check out postcrossing.com.
